Muffins, this way, that way, and the NEW way

Some time ago..a few years anyway, I created a Banana Muffin recipe. Here's how it goes. Then I"ll share the changes and well just get creative!

Banana Cream Muffins

1/2 c cream, half n half or milk
1/2 c oil or soft butter
1 c sugar
2 eggs
1-1.5 c mashed banana (I just use whatever..usually 3-4)
1 t vanilla
1/2 t salt
1/2 t baking soda
1 t cinnamon
1/2 c chopped nuts and/or chocolate chips (optional)

Mix wet ingredients. Fold in dry. Bake at 350 F for about 12-15 minutes or until just done. Makes about 18 muffins.

Now some variations:
Double Chocolate:
add 2 T cocoa and up the cream to 3/4 c, toss in 1/2 c chocolate chips
Sweet Potato or Pumpkin:
sub mashed cooked/canned pumpkin or yan/sweet potatoes for banana
add a pinch of cloves and nutmeg or use 1 t pumpkin pie spice
Apple: Add 1 c diced apples
Berry: add 1 c of frozen or fresh berries when dry is almost folded in.

Recipe changed for a little more health value:
1/2 c organic virgin coconut oil, melted or soft butter
1/2 c organic full fat coconut milk
1 c organic Rapadura sugar or 1/2 c Agave syrup
2 eggs, organic when possible
1 t vanilla
1 c organic mashed fruit/veggie or see above variations
1c organic AP flour
1c organic white wheat flour
1 t cinnamon or 1 t pumpkin pie spice
1/2 t baking soda
1/2 t sea salt

Let's get back to business

I've really been wanting to get this blog back up and running. I have time right now. Youth Football is over. Basketball hasn't started. I'm again, a full time stay at home mom.
Waiting for the school district to get on the ball..then I'll do some non certified subbing. (Everything but teaching.) LOL
I've been changing the way we eat over the last year. Things are ever evolving on what goes on in the kitchen. I'm going to start sharing how I've changed my own recipes. The new recipes I've tried and what I no longer allow in my pantry, fridge and freezer. The boys are adjusting well actually. Some things they grumble about. But through this process and journey of nourishing my family in whole and wholesome foods we are finding some things we like better than the "old way".
